Personally, my all-time favorite Vietnamese dish is pho bo, which is a beef noodle soup that originated in the North of Vietnam. For me, it is pho kho. I like several different pho recipes, my favorite being a beef variety as well but I do enjoy it being served "dry" with the broth separate.

It is easy to say phở and while overall it is my favorite, the best single dish I had ever had was cơm tấm from a very small "hole in the wall" restaurant I happened upon on one of my trips. I don't even remember where it is located but I know it was in Saigon. I am such a huge fan of very simple meals when they are done right.

I really do love pho. I have had 4 different kinds. I can't remember what was in my favorite one but I wish I knew cause it was AMAZING!

It's hard to choose just one favorite Vietnamese dish because there are so many delicious options. However, one dish that always stands out in my mind is pho. I remember sitting in a small cafe in Hanoi, surrounded by locals, and savoring a bowl of fragrant, steaming pho. It was a simple dish, but it captured the essence of Vietnamese cuisine for me: bold flavors, fresh ingredients, and a sense of warmth and comfort. That was my first time ever having pho even though I live in the states. Now that I'm back in the states, I always try to find a pho restaurant near me. I have a routine of eating pho once a week. It's like having my coffee routine in the morning.

I have had several, some I have liked, some I did not care for so much but there is only one that I LOVE and that is phở. Even the more fishy varieties I have found enjoyable and I am not really a fish eater.

The best I eat is the fish caramel (lightly spicy and with ginger) of the Viet Chao Ban restaurant in Hanoi, probably the best Viet restaurant in Vietnam

Th restaurant also proposes outstanding spare ribs in honey sauce  as well as bass fillet cooked in a banana leave and superb shrimps in coconut milk, that one served in a coconut. Eat all that with delicious black rice.

I had this fish and poultry dish. Well, it was something someone else had ordered and I had a bit of it. It was some sort of pho but it was not called that. I wish I could remember what it was. It was amazing!
