I am a fiend for banh mi. I'm not picky about what kind of meat it has in it, or even if it has meat at all. I just always want pate on there. I think the pate is what makes it delicious. It's like, without that, you get a sandwich with the right bread and accouterments, but the pate is what makes it a banh mi.
